Check the ViBES! This week was hard losing our dog, Peewee. He was my ride-or-die and was with me through good and evil. In almost every video I filmed over the last 5 years, Peewee was right there with me, soaking up the sun or waiting for the crumbs to hit the floor. I will never forget and see him on the other side. So, I spent some good time in the MidWest—the suburbs of Chicago. Garrett Popcorn is a place in Chicago, and they are world-famous for their cheddar and caramel popcorn mix. I mean, I could eat an entire tin by myself. Over 8 years since I have had Garrett's Chicago mix, I decided to make my own. There are some steps to this, but I promise it is yummy!

I used to miss cheese until I started making my own plant-based cheeses at home. I have experimented with many cheese bases, like cashews, almonds, sunflower seeds, and tapioca starch. This cheese uses coconut cream. I added sauerkraut brine to the mix, and it gave the cheese a tangy, aged vibe. This one is perfect for whipping up and eating during the holidays, with the cranberry adding a sweet vibe to the savory cheese spread.

This is a recipe we often turn to when we're out of our favorite store-bought dressing. I've never really written it down; I'm always just going with my gut. But today, I've put together a recipe that tastes great and provides a nice dose of nutrients from the hemp seeds. In the video, I forgot to add the vegan Worcestershire sauce, and it is needed. It adds a nice savory base to the sauce. 

I love to eat raw, plant-based foods when I need a reset. Last week, I took a few days to eat raw and enjoy foods like this Mediterranean Wrap. The star of this recipe is the pumpkin seeds! They have more protein than most nuts and seeds and are in season.

This smoked curry sweet potato mix has to be my favorite savory filling for “pot pies” to date. We ate these all in one night and were ready to fight for the last one. You can make this recipe with skull molds or a simple muffin pan. This would be fun to make with the kids or if you want to impress someone with a fire plant-based dish.

We're diving straight into fall vibes with this copycat version of a Pumpkin Pie Pop-Tart. I used maple syrup, nutmeg, cinnamon, and pumpkin purée for the filling and made two different icings for this recipe. One icing is maple cream cheese (plant-based of course) topped with orange and lemon zest. The other is maple pumpkin with chia seeds (for color). I tried many versions of walnut meat in my 7 years of eating plant-based, and the one complaint I always get from viewers is, "the walnuts don't get soft". Well, the solution for that problem is simple. A pressure cooker. For this Perfect Walnut Meat Recipe, a pressure cooker is vital. I use an Instant Pot. I kept this recipe "unseasoned" so that you can season how you wish, depending on how you want to use the meat. 

In honor of National Creamsicle Day, on August 14th, I made this creamy and delicious Orange Creamsicle Cheesecake. It is so good, you may just eat it straight from the pan.
