Walnut Sausage Waffle Sandwich

As some of you may know, I was the co-owner of a vegan breakfast café called Spoiled Vegans. This recipe is inspired by a sandwich we served there, the "McSpoil". I updated another recipe of mine, the Walnut Breakfast Sausage, to improve the texture a bit. This one is FIRE stacked with a vegan egg and sauteed kale in between two waffles. Check the Vibes!

Walnut Sausage Patty

  • 1.5 cups shelled raw walnuts
  • 1 cup rolled oats
  • 1 cup canned black beans, rinsed & drained
  • 1/4 cup refined coconut oil
  • 1/3 cup maple syrup
  • 1/2 cup roughly chopped white onion
  • 1 Tbsp minced garlic
  • 2 tsp dried parsley
  • 2 tsp Italian seasoning
  • 1 tsp black pepper
  • 2 tsp dried fennel seeds
  • 1 Tbsp smoked paprika
  • 2 tsp red pepper flakes
  • 1.5 tsp salt
  • 6 Tbsp liquid vegan egg
  • 2/3 cup vital wheat gluten

Additional Ingredients

  • waffle mix
  • liquid vegan egg OR patty
  • kale
  • maple syrup
  • cooking oil OR spray

Directions

  • Soak walnuts for at least 2 hours in hot water (or overnight in refrigerator), then drain
  • Place walnuts, oats, black beans, coconut oil, maple syrup, onion, garlic, parsley, Italian seasoning, black pepper, fennel, paprika, red pepper flakes, salt, and liquid vegan egg into food processor. Pulse until smooth texture
  • Place mixture into a bowl and mix in vital wheat gluten. Mix until well combined
  • Form patties, placing onto a flat surface (parchment paper helps reduce sticking)
  • Preheat steamer pan. Once heated, steam patties in small groups for 1 hour. Flip halfway through
  • In a sauté pan, with a small amount of oil, sear the steamed patties on medium heat until both sides are browned
  • Build the perfect breakfast sandwich with two crispy waffles, a vegan egg patty, and sauteed kale. Drizzle with maple syrup. Enjoy!

TIP: This recipe makes about 6-8 patties. If you do not want to use them right away, you can steam them and store them in the refrigerator for 3-5 days, then sear them in a pan before serving. Store with parchment paper between.
