Spicy Harissa Portobello Burger w/ Plantain Bacon

Spicy Harissa Portobello Burger with Plantain Bacon while camping in the beauty of the desert 🏜️ 🌵. I had to start cooking this delicious sandwich before the desert heat came for me. I had another recipe in mind but struck gold when I discovered my plantains were not ripe. If you can use young jackfruit and young breadfruit to create meat replacements, why can't you use young plantains? When plantains are not mature, they are not sweet and can take on the flavor you want. I was impressed with how crispy the plantains were. I love anything mushroom and grilled on a wood fire, and this Spicy Harissa Portabella did not disappoint. Check out the recipe for the marinate below.

Shopping List 

Spicy Harissa Mushroom Marinade

  • 1/4 cup coconut amino OR liquid amino
  • 3 Tbsp avocado oil OR grape seed oil
  • 2-3 tsp lime juice
  • 1.5 Tbsp harissa seasoning blend
  • 2 tsp fresh garlic, finely chopped
  • 1 Tbsp green onion OR chives, finely chopped

Plantain Bacon

  • 1 unripe plantain (should be a little soft, but not mushy)
  • 2 Tbsp avocado oil
  • 2 Tbsp liquid amino
  • 1 tsp liquid smoke (optional)
  • 1 Tbsp maple syrup (optional)
  • 1 tsp apple cider vinegar
  • 2 tsp dry minced garlic
  • 2 tsp dry minced onion
  • 1.5 tsp paprika
  • to taste black pepper

Creamy Coconut Habanero Sauce

  • 1 habanero pepper
  • 1 cup raw cashews
  • 1 cup coconut cream
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 red onion, grilled/roasted
  • 4-6 cloves garlic, grilled/roasted
  • to taste salt

Additional Ingredients

  • 2 portobello mushrooms
  • 2 burger buns
  • red onion, sliced
  • red bell pepper, sliced
  • avocado

Directions

  • Combine all Spicy Harissa Mushroom Marinade ingredients in a container that is large enough to marinate the mushrooms. Then add the mushrooms and coat evenly. Set aside
  • Get your grill or fire hot. You can also use the oven to roast these ingredients, if you don't have a grill. Grill 1/2 of a red onion, 1/2 a bulb of garlic (about 4-6 cloves), and the portobello mushrooms. *Save the marinade*You want the onion and garlic to be soft. The portobellos should be well cooked. This may take about 20-30 minutes on indirect heat, 10-15 minutes on each side. Set aside onion & garlic for the sauce. TIP: While grilling or after grilling, brush the portobello mushrooms with the remaining marinade
  • While the mushrooms and veggies are grilling, thinly slice the plantain into "bacon" strips
  • Combine all ingredients for the plantain bacon in a dish. Then coat the plantain strips with the marinade. Cook in a cast iron skillet over fire OR cook on the grill until preferred crispiness (I like mine to be extra crispy)
  • Blend all ingredients together for the Creamy Coconut Habanero Sauce in a high speed blender. Set aside
  • Slice red onion and red bell pepper for your sandwiches
  • Toast burger buns on the grill, if preferred
  • Assemble your sandwiches with burger buns, crispy Plantain Bacon, red onion, red bell pepper, sliced portobello mushroom, avocado, and Creamy Coconut Habanero Sauce.
