Rasta Pasta w/ Jerk Jackfruit
This has to be one of my favorite pasta dishes! Don't tell anyone.... but I don't really do pasta, so my previous statement indicates how delicious this dish is. Enjoy!

Shopping ListÂ
Ingredients
- 1 tsp minced garlic
- 3 Tbsp olive oil
- 7oz jackfruit OR plant-based chicken
- 1-2 Tbsp jerk seasoning
- 1 chopped red bell pepper
- 1 chopped green bell pepper
- 1/4 tsp thyme
- 1/2 tsp tumeric
- to taste salt & pepper
- 1 can coconut cream
- 2 & 1/2 cups pasta noodles

Directions
- Sauté minced garlic in olive oil. Add jackfruit and jerk seasoning. Cook 4-5 minutes on medium heat
- Add red peppers and green peppers and sauté for additional 2-3 minutes
- Add thyme, turmeric, and salt & pepper and cook for 3-4 minutes, until veggies are medium softness
- Add coconut cream and cook on medium for 5 minutes
- While the sauce is coming together, boil pasta to al dente
- Mix all ingredients together and enjoy!
