Rasta Pasta w/ Jerk Jackfruit

This has to be one of my favorite pasta dishes! Don't tell anyone.... but I don't really do pasta, so my previous statement indicates how delicious this dish is. Enjoy!

Shopping List 

Ingredients

  • 1 tsp minced garlic
  • 3 Tbsp olive oil
  • 7oz jackfruit OR plant-based chicken
  • 1-2 Tbsp jerk seasoning
  • 1 chopped red bell pepper
  • 1 chopped green bell pepper
  • 1/4 tsp thyme
  • 1/2 tsp tumeric
  • to taste salt & pepper
  • 1 can coconut cream
  • 2 & 1/2 cups pasta noodles

Directions

  • SautĂ© minced garlic in olive oil. Add jackfruit and jerk seasoning. Cook 4-5 minutes on medium heat
  • Add red peppers and green peppers and sautĂ© for additional 2-3 minutes
  • Add thyme, turmeric, and salt & pepper and cook for 3-4 minutes, until veggies are medium softness
  • Add coconut cream and cook on medium for 5 minutes
  • While the sauce is coming together, boil pasta to al dente
  • Mix all ingredients together and enjoy!
