Onion Rings

I originally made these crispy air-fried onion rings for National Onion Ring Day (yes, it's a thing). It is hard to believe I used to hate onions as a kid. I missed out for so many years.

Shopping List 


Ingredients

1 large onion

dipping sauce of choice

avocado oil spray

Wet Batter

1 cup unsweetened, unflavored plant milk

5 Tbsp plant-based egg*

1.5 cups arrowroot powder**

2 tsp Cajun seasoning

Dry Batter

1 cup arrowroot powder**

2 tsp Cajun seasoning

Panko Breading

1 cup panko breadcrumbs

2 tsp granulated garlic

1 tsp dried oregano

salt & pepper to taste

Directions

  • Cut onions to preferred thickness
  • Soak onion rings in ice water for 15 minutes, then strain and place to the side
  • In a bowl, combine Wet Batter ingredients. In a separate bowl, combine Dry Batter ingredients. In a third bowl, combine Panko Breading ingredients. Coat the onion rings with Dry Batter then Wet Batter then Panko Breading
  • Lightly spray onion rings with avocado oil and air fry at 350 degrees Fahrenheit for about 12-15 minutes or until golden crispy. (If preferred, you can also deep fry these at 370 degrees Fahrenheit)
  • Enjoy with your favorite dipping sauce!

*For this recipe, I used store-bought JUST egg. For an alternative, see my Mung Bean Egg recipe**Cornstarch is a good alternative for arrowroot powder. You could also make these with flour, if preferred
