Brazil Nut Double Onion Burger (Western Style Burger)

Growing up in San Diego, I used to love grabbing a Western Burger at Carl Jr. Here is my take on this classic burger with double onion, using caramelized onions and onion rings, mushroom bacon, Brazil nut patty, BBQ sauce, jalapeño sauce, lettuce, pickles, smoked cheese, and plant-based mayo in a pretzel bun. This was the first time I used Brazil nuts and infused them into a burger with wild rice, Bella mushrooms, spices, and herbs, and I was impressed with the flavor and how it paired well with all the other flavors.

Shopping List 

Burger ingredients:

  • 1 cup soaked Brazil nuts (about 12)
  • 1 1/4 cups cooked wild rice
  • 1/2 cup vital wheat gluten
  • 1/2 cup sliced cooked Bella mushrooms
  • 3 chopped garlic cloves
  • 1 Tbsp nutritional yeast
  • 1 Tbsp of steak seasoning (no salt)
  • 1/4 cup of soaked sun-dried tomatoes
  • 2 flax meal eggs (2 Tbsp of flax meal mixed with 1/4 cup of water)
  • 1/2 cup of vegetable broth
  • 1 Tbsp of avocado oil

Other ingredients:

  • Plant-based mayo
  • Onion rings
  • Mushroom bacon or plant-based bacon
  • Pickles
  • Lettuce
  • Caramelized onions
  • BBQ sauce

• • Plant-based cheese

Directions

  • Soak Brazil nuts for 4 hours.
  • Add to a food processor with sun-dried tomatoes and blend.
  • Slice mushrooms and sauté in a pan without oil or water until water releases.
  • Add garlic and sauté for a few more minutes while flipping mushrooms.
  • Add wild rice and cooked mushrooms to the food processor and blend until smooth.
  • Add the mix to a large bowl with nutritional yeast, steak seasoning, vegetable broth, and avocado oil. Mix well.
  • Add flax meal egg and mix.
  • Add vital wheat gluten and knead for 3 minutes.
  • Create 8-10 small balls with the mix.
  • Add avocado oil to a pan and add one ball.
  • Use parchment paper and a press to smash the burgers.
  • Cook well on both sides and add cheese at the end.
  • Build your sandwich and enjoy!
